A washed Yirgacheffe from one farmer, Mr. Tadese Teko, roasted light for filter. Cooked cherry, white wine and caramel with juicy acidity.

This one is for the black coffee drinkers. Pour over, batch brew, Aeropress or the Moccamaster on the bench.

In the cup you get cooked cherry and fresh white wine up front with mild caramel underneath. Juicy acidity and a candy-like sweetness.

Next to the Mengeche Derso natural on our shelf, this is the cleaner, brighter one. Same part of Ethiopia, different process. The natural is all ripe fruit. This is clean and bright.

It is a small lot from a single farm. Once it is gone it is gone.

Mr. Tadese Teko farms 8 hectares in Shale village, near Worka town in the Gedeb district of Gedeo Zone, Southern Ethiopia. That is a big farm for the area, where the average is around 4 hectares. Coffee income is what puts his nine children through school. Fertiliser is made from farm waste and no chemicals go on the trees. The lot is a mix of heirloom Ethiopian varieties grown between 1,780 and 2,100 metres, harvested October to January, and graded Grade 1.

Washed coffee in Ethiopia is usually picked ripe and pulped the same day, fermented for 8 to 12 hours in open tanks, washed through channels to strip off the fruit, then dried on raised beds for 5 to 15 days. Taking the fruit off before drying is why the cup is clean and bright rather than jammy.

This lot comes to us through Cafe Imports' Single Farmer Project. The farmer's name goes on the contract, the price is negotiated on their behalf, and the deal only goes ahead when the farmer agrees to it. It means we can tell you exactly who grew this coffee, which is not a given out of Ethiopia.
