Nightcap is our naturally decaffeinated single origin, for people who still want a proper coffee. A medium roast with depth, balance and body.

Designed to taste closer to our darker blends, Nightcap delivers rich cocoa, toasted sweetness and a smooth, composed finish.

Silver medal, milk based decaf class, Royal Tasmanian Fine Food Awards 2026. Judged in a flat white, which is how most people actually drink it.

A single origin from Huila in Colombia, grown between 1400 and 2000 metres and washed at origin. Castillo, Caturra and Colombia varieties.

The caffeine comes out using the sugarcane process, ethyl acetate derived from fermented sugarcane, rather than the synthetic solvents most cheap decaf relies on. Ethyl acetate is a naturally occurring ester, the same compound that gives ripe bananas their smell. That is what lets the flavour stay in.

Easy to dial in and forgiving on home machines, it extracts cleanly whether you're brewing espresso, milk-based coffees or a late-night long black.

We roast our decaf in small batches weekly for optimum freshness, because decaf naturally stales faster than regular coffee.

Freshness and delivery

Every bag is roasted to order at our Wendouree roastery and dispatched within 2 days. The roasted on date is printed on the bag.

The coffee is ready to brew as soon as it arrives and is at its best over the following 4 to 6 weeks. Keep it sealed, out of the light and away from heat.

Around Ballarat we deliver on our own local runs. Everywhere else goes by Australia Post. Shipping is calculated at checkout.

What is Nightcap?

How is Nightcap decaffeinated?

How much caffeine is in Nightcap?
Not none. No decaf is completely caffeine free. The sugarcane process removes the large majority of the caffeine from the green bean and leaves only a trace, which is why Nightcap works as a night time coffee. If you need a precise figure, get in touch and we will give you what our supplier certifies for the current lot.
What roast level and strength is Nightcap?
Medium roast, and 8.5 out of 10 for strength on our own 1 to 10 scale. That puts it just under Mount Buninyong at 9, so it is not a step down in strength from our regular blends.
How do I dial in Nightcap?
For a double espresso, 20g in and 40g out in 27 to 30 seconds at 93°C. That is a 1:2 brew ratio. It is forgiving on home machines and easy to dial in.
What machines does Nightcap suit?

Effectively yes. Orders of $100 or more ship for 1 cent anywhere in Australia. Under $100, standard shipping is a flat $12.50.
